The pig roast is tommorow and I am happy to report that the pig is in the building. Many people ahve asked just how this is going down. Well… we are roasting a whole pig outside in a caja china, which is a box that the pig roasts in, the heat comes from charcoal which is on the top of the box, the process takes about 5 hours. We are serving the roast pork along with the jerk chicken, the salt cod fritters, pigeon peas and rice, oxtail braised green beans, jamaicain sweet buns buffet style, so you serve yourself. If you choose to include the two drinks you can choose from red stripe and island rum punch… it is going to be a great meal. $27 for the meal, $37 with two drinks.
